2-Ingredient Ice-Cream Muffins Easy Recipe for Kids

This has to be the easiest muffin recipe. It may seem crazy, but if you think about it, it actually makes sense. After all, ice cream is pretty much the same ingredients we usually use for baking: eggs, sugar and cream (which turns into butter if you churn). Add that to self-rising flour and you've got all the makings of muffins. Not only is it easy enough for a toddler to mix up, they'll love baking with ice cream, too!

The ingredient list short so you barely need to measure. Just mix vanilla ice cream and self-rising flour in a two-to-one ratio. So, add one cup of flour to a pint (two cups) of softened vanilla ice cream, spoon into muffin cups and bake in a preheated oven at 425 degrees for 20 minutes or until a toothpick comes out clean. Done! These muffins come out fluffy and not too sweet and make a great base for your favorite muffin additions. Blueberries work great, or whatever add-ins you prefer.
