Easy 4th of July Recipe: Patriotic No-Bake Icebox Cake

An icebox cake actually doesn’t have any cake in it all. It’s a combination of cookies with cream, or pudding, which is assembled and placed in the refrigerator. For you youngsters, before people had refrigerators, they kept food chilled in an icebox. In this version the cookies are layered with vanilla pudding, strawberries and blueberries for a patriotic twist. The coolest thing about it is you won't overheat your house from the oven and it's safe for the littlest helpers to do from start to finish.

You will need: 1 cake pan 1 box of wafer cookies 3-4 vanilla pudding packs Blueberries Strawberries, cleaned and cut up 1. In your cake pan layer cookies, pudding and fruit, making as many layers as you can. 2. Cover with plastic wrap or aluminum foil and refrigerate for 24 hours. The pudding soaks into the crunchy cookies and softens them to create a texture like cake. You can decorate the top with more fruit for an extra patriotic feel or eat as is.
